What is the Black Edition Oven?
The Gozney Black Edition Series is the cutting edge of professional grade stone ovens.
Designed to work as either an indoor or outdoor standalone feature, or to integrate into a counter system for the home or commercial kitchen, the Black Edition is versatile for any number of applications.
All segments are hand cast from Gozney CeramixTM, combining strength, porosity, density and heat retention to create the perfect stone hearth environment for a wide range of cooking techniques and temperatures.

What comes with the purchase of a Black Edition ‘Kit’?
With the Black Edition kit, you will receive the following:
Build instructions/manual, enamelled cast iron fascia and door, powder coated reinforced steel stand, high grade specialist insulation wrap, high density calcium silicate underfloor insulate, quick connect mesh system, specialist Gozney Ceramix TM floor and dome, puck system, fascia mounted bi metal thermometer, stainless steel flue length, rain cap, Gozney professional grade placement peel and tool kit.

Gas burners are available from the accessories store.

What is a puck system?
Gozney’s patented assembly system uses pucks beneath the CeramixTM floor to ensure an even and safe installation.

How much does the oven weigh?

Is a flue supplied?
A 500mm, single wall flue length and rain cap is included, suitable for outdoor use.
For indoor use, we recommend a 150mm, dedicated twin wall stainless steel flue system, ideally with a variable speed fan for the terminal end to assist with the draw of emissions.

Do Gozney sell flue systems?
Unfortunately, no. We do not sell flue systems, however we can advise of the type of flue required and provide a recommendation of a flue specialist.

Can a Black Edition be used both indoors as well as outdoors?
The finishes throughout are specified to deal with everything from the rigours of a commercial kitchen to adverse weather. That said, there are ways to improve on the longevity of the finishes through regular maintenance and applying additional finishes such as tiles, or covering up during prolonged periods of downtime. Speak to a product specialist for further information on this.

Can I build a Black Edition myself or do I need professionals?
Black Editions are fully modular and designed for self-assembly using the comprehensive set of instructions included. Alternatively, Gozney would be happy to quote on installation based upon location. Please give us a call or fill in the online contact form for more information.

Can the oven be placed on any floor surface?
Due to the weight of the Black Edition, the oven must be situated on a solid, load bearing surface. We would recommend that the floor finish is taken into account and to ensure that the appliance is not placed above an unsuitable void (eg: on decking, above a basement where load capacity is insufficient/limited)

The website says that Black Edition is sold as a kit, how long does it take to build?
Depending on the size, we recommend allowing at least a full day to build the oven and an additional day for a skilled renderer to render the oven.
The oven will need to be completely dry before use which can take up to 4 days. Refer to ‘first fire up’ advice on the steps to getting the oven up to temperature for the first time.

How do you render?
We would recommend when rendering to ensure that each layer is still damp before applying the next layer. If the render has dried too much before the next layer is applied, it may not bond correctly. Ensure intense/direct sunlight is avoided as this can dry the render too fast. We recommend that heavy rain is also avoided as this can saturate/spoil the render.

Why does the Black Edition not come complete/already built?
The main reason we offer Black Edition in Kit form is for convenience.
The modular design of the Black Edition oven means that everything can be maneuvered through premises / a standard width doorway, meaning no structural amendments are required in order to reach the installation area. With components broken down into small, manageable segments, there is also no need for any special lifting equipment.Shipping a large pre-made oven can prove difficult for a number of reasons. The weight and size of the product not only increases the cost of shipping, but can also add delivery complications, especially where negotiating premises.

Why does the Black Edition not come complete/already built?

Is the oven heated by wood or gas?
The great thing about the Black Edition is that it is versatile and can be fuelled by either wood or gas. (Natural or LPG)
It's also simple to switch between fuel types if you’d like the flexibility of choosing Gas for one fire up and wood for the next!
This gives you the option of cooking via traditional wood-fired methods, or to have the precise control and convenience offered with gas.

Can I use wood and gas?
Whilst you can choose which fuel type you would like to cook with, we would not recommend using both gas and wood together for a number of reasons. Firstly, wood and gas burn in a slightly different manner, meaning combustion of both within the same space can cause competition for oxygen within the chamber and a less than ideal convection of heat. Secondly, the gas burner head will be exposed whilst in operation and during this time, there is potential for ash and debris from a wood fire to fall into the burner head and block the gas burner jets. Finally, when running two fuels at the same time, there is a possibility that the oven may creep over the ideal operating temperatures. Whilst this is unlikely to damage the oven in any way, the large amount of insulation within the Black Edition may mean that it takes some time to drop back to ideal temperatures.

Are the Black Edition ovens available to purchase outside of the UK?
Due to their larger size, we currently do not offer a delivery service for deliveries outside of the UK. This is something we are working hard to address, as we understand that customers are very excited to have one of these Gozney ovens. How is the oven delivered?
The ovens are delivered in a palletised crate system, specially customised to protect the contents in transit as effectively as possible. The layout of the pallet has been designed to make unpacking ergonomic and to follow the order in which you need each component.
In addition to the manual, the pallet also comes with a sleeve that features a visual representation of how to assemble the oven,helping to make installation as easy as possible, even before you have started unpacking!

What are the delivery options?
Currently UK only. Delivery to be determined when available.

Can I burn the wood and materials from the pallet in the oven?
We advise not to burn anything other than kiln-dried wood in Gozney ovens as it is not effective in generating sufficient heat and may create undesirable flavours for cooking. Also, the wood from the pallets and crates that the oven kit arrived in would contain screws, nails or other undesirable components.

Can I use it straight after it's been built?
We recommend that you allow the oven to dry fully after rendering, and best practice is to follow the first fire protocol, as per the user manual.
Dependent on oven location, it can take up to 4 days for the render to dry fully.

Is the render included?
Render is not included in the price, however a render package can be purchased as an optional extra- please contact our Product Specialists for more information.

Does the render on the outside of the oven tarnish with age?
In our experience, render doesn’t generally tarnish, however with age and prolonged use, the surface can pick up small marks from debris or wear and tear as any surface would do.
It is worth noting that if you find that the render has got particularly grubby, a decent quality, silicate-based masonry paint is the easiest way to get it looking good again. Some marks can also be removed by gently wiping the area with a damp cloth.

Does the render on the outside of the oven require any maintenance?
We would recommend that you make reference to the manufacturer’s guidelines for this, as manufacturers may provide varying information.
We would not however, that small hairline cracks may appear once the oven has been fired; this is totally normal and is a result of the natural expansion and contraction that can take place with such high temperature ovens.

Do you have any guidelines for ideal conditions to Render my Black Edition?
If the Black Edition is situated in an outdoor space, we would recommend that you render it in dry conditions. We would suggest a temperature above 5°c. Any lower than this and the render will take a very long time to cure; not only that, the water in render could freeze, significantly weakening it.
We would also not recommend rendering a Black Edition Oven in temperatures over 30°c and in direct sunlight, as the render can cure too quickly, making it unworkable. -
Can the oven be installed into a mobile setting?
Yes, we have many customers who have installed Black Edition ovens into vans and trailers. We would recommend stainless steel strapping to secure the oven to a base or stand in the vehicle.

How long does the oven take to heat up
The heat up time will depend on a variety of factors including the size, fuel type and location (indoor/outdoors) of the oven. What is the relevant certification?
Black Edition ovens are DEFRA Exempt for use in Smoke Controlled Zones and are also CE Certified.

How hot does the oven get?
This can really depend on your fuel type (Gas/Wood) and the quality of the fuel (if using wood)
The oven will typically heat between 200 – 500oc dependent on your desired method and the items being cooked. For example, Neapolitan pizzas can be cooked very quickly at temperatures in excess of 400oc, whereas bread or meat joints will be prepared at much lower temperatures (100-300oc).

Why is the Black Edition more expensive than the Core?
Although the Black Edition ovens incorporate the Gozney Stone Core as the internal oven structure, they also additionally feature a reinforced supporting stand, larger contemporary cast iron fascia with integrated bi metal thermometer and patented modular fast assembly mesh system that creates the outer profile of the oven dome.
In comparison to the Stone Core ovens, the Black Edition ovens require no additional building materials, only assembly.
